In a manual vac pot, once the coffee has gone "north" you keep the pot over
the flame for an interval that you determine while the grounds and water
steep together and are agitated by steam bubbles (whose vigor you control
with the flame as well). Once you remove the flame the trip "south"
commences. Strictly speaking you can't control the amount of time it takes
for the coffee to drain, but this will hold constant for a given grind and
filter combo (and unless you clog the filter, is quite fast because the
vacuum pulls the coffee thru the filter rapidly) , so you can control the
total contact time fairly precisely.

In some electric vac pots the cycle is automated and the user has no
control over the "north" time .

I'm confused... how do you control the time with a vac pot... as I see it,
once it's started, you can't stop it until it's finished...

now you can control the time with a press pot, percolator or jug & filter
as
described in the OP, as you decide when the press the filter down, or take
the percolator off the heat or pour the brew into the filter...
