What are the pros and cons of setting up a coffee roaster right in thePros:
coffee shop. It would seem that more coffee shop owners would do this.
Are there additional laws, taxes, or licenses that would prevent most
from taking on this type of operation. Please give me any advice as to

Cons:
roasting is food prep so appropriate local codes need to be followed
increased insurance premiums due to fire risks and public liability, the
latter depends on how it's set up
reduced floor space for the shop (handling, storage, roasting, bagging,
cupping)
cramped bulk handling due to confined space
Costs are otherwise the same as afterburner need is not based on being in
retail premises.
fwiw: Martin Diedrich's new c'house in Newport Beach, CA has an in-store
roaster (IR12). It's behind the counter at one end but clearly in view from
