There is no air inside a boiler at temperature, only steam and superheated
water, but I don't doubt that the heat transfer of a probe in water is
faster than in gas (steam). You can put your hand in an oven filled with
200F air and nothing will happen for a long time, but stick your hand in
200F water and it will heat up real fast. However if you make the probe too
long it may "see" the radiant heat from the heating element and get confused
by that. I'm not sure that faster response really gets you very far with
an HX because the brew temp is one step removed from the boiler temp anyway.
