Throw out your espresso cups!

The Bodum "Pavina" cups came out shortly after I bought a set of Illy
"Nudes." (I know they were discussed here at the time.) The Pavinas
looked beautiful, but, I had spent too much on the Illy's to seriously
think of buying them.
This year Santa thought I should have a pair anyway and surprised me
at Christmas with the 2-oz. (really 3-oz.) Pavina demitasses. Well, I
learned two important things.
1. I had never had a properly "hot" espresso before. No matter how
much I pre-heated my Illy's, all that heavy crystal was absorbing a
lot of heat. These double-walled Pavinas are a miracle of vacuum
insulation.
2. Properly hot espresso tastes richer with more high notes than "very
warm" espresso.
Of course, the Pavinas are beautiful, too. Mark Prince has gorgeous
photos of them on CoffeeGeek. They are "mouth blown" of borosilicate
glass, which is used in laboratories (Joan was familiar with it). I
don't know (and probably don't want to know!) how Bodum manages to
sell them for $12 a pair, but there you are. Guess they save money by
leaving out the saucers. The four Illy's are now on a shelf, saved for
parties.
