This doesn't seem to me a fair characterization. The patent record shows
that the industry has created and embraced many innovations over the years.
We might not like all of these innovations (pressurized portafilters,
cappuccinatore, various kinds of pod systems, thermoblocks, etc), and some
others might only exist on paper or in obscure brands (electrically heated
groups, cold water addition for a actively cooling shot temps,
partially-immersed or non-rigid heat exchangers, lateral group gaskets), but
one can hardly fault companies for a reluctance to abandon existing
customers in order to incorporate equipment tweaks that might or might not
actually improve the espresso.
