Over the course of time all those volatile oils evaporate from the
surface of the coffee as it sits in the pot. Thus the complaint about
"stale coffee" at shops with low drip turnover.
It isn't as if making a fresh pot on Sunday uses any more grounds than
making one big pot on Saturday. Offer to buy her a box of filters...
