I think that you misunderstood what she meant. Using a doser as
designed (fulling it full and letting it meter the grounds) IS bad.
However, grinding per shot and flipping the doser lever numerous times
to empty the doser is what we're talking about. It's pretty much SOP
with pro baristas.
