uuuhhh... I can pretty much guarantee your not getting to second crack
and you are probably stalling your roast at several stages. Everytime
the thermal switch cuts off at around 375deg-425, I believe, you'll see
at least a 50 deg drop. This will produce your sour roast every time.
The two mods you need for success will be the thermal switch mod, open
her up and find the thermal switch, if your not sure what it looks like
you can google "poppery mods" or "poppery" and find several websites
w/pics. remove the thin bi-metalic strip and make sure the points are
still touching afterwards. Then your gonna need to instal a switch for
the heat. This is optional but in my opinion necessary. The white wire
as it leaves the roasting chamber needs to be cut and then you need to
instal a 125vac at 10a switch(radio shack) on the two cut ends. If your
not familiar w/electronics and soldering ask someone who is. Worse case
scenario you gotta go to walgreens and pick up a couple poppers for
$10/each. The switch will control heat on and off and provide a very
useful cooling stage. If you need more info email me or you can contact

mod one for you. Just so you know second crack on poppers usually
happens at around 500-550deg at least on the analog probe thermo.
