Worked my way through high school and college as a butcher - thus Butch
- anyway I use a Arkansas stone - sucker must be 60 YO - it has 2 sides
coarse and fine - almost never use coarse side but use fine side on
most sharpening sessions. The real perfectionists like to have their
knife edges hollow ground - the just above the edge is hollow ground.

Between Arkansas stone sessions I use an ancient old butcher's steel to
put an edge back on the blades. Sometimes after whetting on the
Arkansas stone, the blade edge has a "wire" on it and a couple of
strokes with the steel will remove the wire.

I have a powered knife sharpener which looks like a small belt sander
with a carborundum finish on the belt. Does a great job - used by
butcher shops and large restaurants. Some day I will dig it out - does
a damn good job. Oh and never ever put a knife on a carborundum wheel
- lawnmower blades and less similiar items only please and wear eye
protection.
