Get the a thermometer with the fastest response time you can find. Chop
a styrofoam cup down and stick the probe through the bottom. Jam it up
to the group head and run the pump. You should get a reasonable idea of
temp that way. To test it any better, you'll need a thermocouple.

It's fairly normal for the Carezza. It's excess pressure bleeding off
through the OPV. It should be most obvious during the transition from
brew to steam modes. My old machine would ocassionally burble a bit
after sitting idle as well.

One of the effects of the bubbles you are hearing. Another reason is
below.

Hmm...depends He very well could be draining water back into the
reservior from the OPV when pulling a shot. Not uncommon on either of
my Gaggias.
