Hey TT,
The temperature is controlled by a pressure stat. Remove the black
plastic base. There is a screw under the drip tray. On the Gaggias they
use some sort of tamper resistant screw which means that you probably
need to go to the hardware store for the right bit. I got a screw
driver with all sorts of changeable bits from Sears. The older Pavoni's
use normal philips head screws. After removing the plastic base cover,
you should see a very short length of copper tubing that comes out of
the bottom of the boiler and has a big bulbous end with a screw. This
is the pressure stat. Turn the adjustment screw counter-clockwise to
reduce the boiler pressure and temperature. Conversely, if you turn the
adjustment screw clockwise, you would increase the boiler pressure and
temperature.
Try adjusting a quarter turn at a time. With the Gaggia Factory G106,
like the Pavoni Professional, you have a pressure gauge to see the
results. Just listen to when the heating element turns off while
looking at the gauge and you have your set point. For those with G105's
and Europiccola's you've got to judge by the end result, taste.
You can only reduce the pressure/temp so much as the machine needs a
certain amount of pressure to fill the grouphead with water. Go below
this and you can't make coffee.
